  • 1 tablespoon olive oil

  • 3 cloves garlic, minced

  • 1 onion, chopped

  • 1 zucchini, chopped

  • 1 carrot, chopped

  • 1 bell pepper, chopped

  • 1 tin of diced tomatoes (400g)

  • 1 can tomato Sauce 400 Gm

  • 4 cups vegetable broth

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • Salt and pepper to your desire.

  • 1 cup ricotta cheese

  • ½ cup shredded mozzarella

  • Fresh basil for garnish

  • The first step :
    Heat olive oil:
    Then in a large pot, add the olive oil to the heat and let the heat set to medium.
