Ingredients

  • For the Cheesecake Filling:
    4 oz cream cheese, softened
    2 tbsp powdered sugar
    ½ tsp vanilla extract
    Mix all of this and scoop into small dollops on a lined baking tray. Freeze for 20–30 minutes until solid.
    For the Cookie Dough:
    ½ cup unsalted butter (softened)
    ⅓ cup granulated sugar
    ⅓ cup brown sugar
    1 egg
    1 tsp vanilla extract
    1½ cups all-purpose flour
    ½ tsp baking soda
    ¼ tsp salt
    ⅓ cup crushed freeze-dried strawberries
    Optional: white chocolate chips or graham cracker crumbs

Directions

  • Prep the Filling
    Mix the cream cheese, vanilla, and powdered sugar. Take a teaspoon of dollop on a parchment paper. Put in freezer to freeze solid, 20 30 minutes.
  • Make the Cookie Dough
    Now, mix the butter and sugar until soft. Combine the egg and the vanilla and beat thoroughly.
    In another bowl, mix flour, baking soda, and salt. Add to a wet mixture. Gather the crushed freeze-dried strawberries.
  • Refrigerate and Bake
    Refrigerate the cookie balls needed together for at least 30 minutes. Then cook in the oven at a temperature of 350°F (1750C) for 10 12 minutes. It ought to be crisp on the fringe, softish on the centre.
    Cool on the tray and then take to a structure in 10 minutes.
  • Put together the Cookies
    Place scoops of cookie dough into two dozen dough balls (round about 1.5 tablespoons each). Fold a little bit flat and place a bit of frozen cream cheese filling inside. Dress the pie, near it, and cover it with a hold-on to wrap.
