Ingredients
- 1 kg carrots, peeled and grated
- 1 liter milk
- 1 cup sugar (adjust to taste)
- 4 tablespoons ghee (clarified butter)
- 4-5 green cardamom pods
- A handful of nuts (almonds, cashews, pistachios) for garnish
- Optional: Raisins or khoya (milk solids) for extra richness
How to Make Gajar Ka Halwa
Step 1: Cook the Carrots in Milk
Grate the carrots: The first process is the preparation of carrots by washing the carrots prior to peeling and then grating them. For this part, it is okay to use a food processor if you have one since it will make work easier.
Simmer with milk: Now in a large pan, first add the grated carrots and the milk. It allows the fire to be moderate while stirring it from time to time until most of the milk has been fried and the carrots have softened. This should take approximately 30 to 40 minutes depending on how well prepared each student is.
Step 2: addition of Sugar and Ghee
Sweeten it up: As the liquid dries up you can then add the sugar into the paste. Stir the sugar well then fry the mixture, for another 10-15 minutes or until the ketchup becomes thick.

Garnish: The nuts and raisins could be mixed in the casserole.Ar sprinkled on the top before the casserole is served. If khoya is being used then it should be added in at this stage priorities for nursing care including initial priorities.

Gajar ka Halwa is ready for serving with some fresh cream and garnished with nuts. Warm is considered to be its perfect serving although it can also be eaten cold by itself or with a spoonful of vanilla ice cream.
